Garlic Prawns with Multigrain Bread
Ingredients:
200 gm prawns (without tail) 1/2 cup extra-virgin olive oil 10 large cloves of garlic (slivers) 1 tsp. red pepper flakes Orange Rind 1/3 Cup Spanish White Wine Salt and fresh ground pepper to taste Fresh cilantro (Sprigs) Fresh Multigrain bread (Slice)
Method:
In a heavy frying pan, warm the olive oil over medium heat. Add the garlic and red pepper flakes and sauté for about 1-2 minutes, but be careful not to let it burn. Raise the heat to high and immediately add the prawns, sauté for 1-2 minutes, and deglaze the pan with white wine. Stir well, and then sauté until the shrimp turn pink. Grate some orange rind for a tangy flavour. Remove from heat and transfer prawns with sauce to a warm plate or serve right from the pan. Season to taste with salt and freshly ground black pepper. Warm a pan and drizzle extra virgin olive oil over a slice of multigrain bread. Serve hot prawns over toasted multigrain bread toast. Garnish with cilantro and lettuce.
