Your 9-step guide to perfect masala chai
Ingredients
2 cups water, 1 cup milk, 1.5 tsp powder, 2-3 inches cinnamon stick, 4-5 green cardamom, 2-3 cloves, 1-inch piece of ginger, grated, 2-3 black peppercorns, 2-3 tsp sugar to taste.
Step 1: Boil the water
In a saucepan, bring the water to a boil.
Step 2: Add spices
Crush cinnamon stick, cardamom, cloves, grated ginger, and black peppercorns in a mortar and pestle and add it to the boiling water.
Step 3: Simmer
Reduce heat and let the spices simmer for five-seven minutes, or until the flavours are infused into the water.
Step 4: Add tea powder
Add the tea powder to the spiced water and let it steep for three-five minutes.
Step 5: Add milk
Pour in the milk and bring the mixture to a boil again.
Step 6: Sweeten
Add sugar to taste and stir well.
Step 7: Strain
Strain the tea into cups, removing the tea bags and spices.
Step 8: Serve
Serve the masala chai hot.
Step 9: Enjoy
