Step into any Indian kitchen at lunchtime and you will see plates full of rice, rotis, dal, vegetables and curd, but also an excess of carbohydrates. A large scale ICMR study of more than one lakh Indians shows that about 62 percent of daily calories come from carbs, while only a small portion comes from protein. This imbalance is contributing to growing health issues, including diabetes and obesity. With more than 100 million people suffering from diabetes, India is facing a major dietary challenge.
