The S Pellegrino Asia’s 50 Best Restaurants list is out and the number of Indian restaurants that made the cut is a grand total of six. The top Indian restaurant in the list at number three is not located in India but it is the Bangkok-based Gaggan by Kolkata-born chef Gaggan Anand. According to the survey, the standout dish at Gaggan’s is “Papdi chaat 2050”. Gaggan’s restaurant serves Indian cuisine with an ultra-modern twist. Some dishes from this restaurant that find mention include: Green with Envy which is perky green peppercorn chicken kebabs combined with coriander foam, and their signature dish, Chowpati Year 2050, a whimsical take on the street-food snack papdi chaat, comprising a spherical yoghurt ‘egg’ on a fried dough chip with herbal foam and tamarind chutney. Bukhara is located at the New Delhi ITC Maurya Hotel. The signature dish at this restaurant is the Sikandari raan. The other three restaurants from Delhi are Indian Accent at The Manor at number 29, Dum Pukht which is also located at ITC Maurya at number 30 and Varq at number 32. Varq is located at the Taj Mahal Hotel on Mansingh Road and serves Indian food with a modern twist. The lone restaurant from Bombay on the list is Wasabi by Morimoto which is located at the Taj Palace in Colaba. At number 49 is Karavalli, Bangalore, India. All the Indian restaurants saw a fall from last year’s rankings. As far as Asia’s top restaurant goes, it is Nahm which has been set up by Australian chef David Thompson in Bangkok and
serves cuisine based on Thai memorial-book recipes.
