Beef and beans cooked together and wrapped up in a roll makes for a highly satisfying lunch. To have the filling really nice and thick, let the beans and meat cook a while longer so you’re sure you won’t have spill-outs. Of course, it isn’t easy to get beef stock around here; but plain water is a convenient substitute. What’s more, it even freezes beautifully, so that leaves you with yet another option for a quick weeknight meal.
Some easy steps to pack in more flavour: a squirt of lemon juice, a dollop of sour cream, a sprinkling of green chillies, and a handful of lettuce leaves and tomatoes. You can also replace the beef with mutton if you’d like.
Time-saver tip: When making chapattis, make some extra with all-purpose flour (maida) for the tortilla.
