This vegetable stew doesn't need any additional seasonings outside of salt and pepper and maybe a little chopped green chilli for the fiery Indian palate.
The vegetable stew doesn't need any additional seasonings outside of salt and pepper and maybe a little chopped green chilli for the fiery Indian palate. The natural flavours from the vegetables combine perfectly to give you one hearty stew.
If you like a little sweet, caramelised onion flavour then add an extra onion and fry until golden brown before you add in the vegetables.
You can play around with the vegetables and quantities— leave out what you don’t like, increase the quantity of what you like— the recipe is quite versatile. The recipe makes a lot of stew. Enough to pack yourself leftovers for a generous lunch the next day.
Time saver tip: Get your household help to help chop and boil the vegetables before hand and store it in the refrigerator until you’re ready to use it.

1 can of tomatoes or 400g fresh tomatoes
2 red bell peppers
300g French beans
