Steaming hot Akuri (Parsi style scrambled eggs) laden with spices, onions and tomatoes and coriander on a plate, is a mutiny of colours that’s waiting to be devoured. Dollop it with some cold butter right before serving. You can also use the same recipe with crumbled paneer instead of eggs, and what you end up with is a style of spicy paneer bhurji.
