Brekker on the go: cornflake-crusted French toast

Soft, custardy bread, enveloped in a crunch case of crushed cornflakes, served with a side of seasonal peaches and cherries — there’s always that inner kid in you who will devour this in minutes.

While the recipe calls for the French bread, brioche, you can just as well use any bread that’s easy for you to get your hands on. Just make sure it’s not a precut loaf. When you cut your own thick slices of bread, you can have that much more egg and milk mixture soak it up and give it a rich, creamy texture. Soak it a little longer in the egg-cream mixture if you please.

Flavour tip: When zesting the orange for the recipe, make sure to stop grating as soon as you see the white pith. The zest has all the orange flavour oils. The white stuff makes everything bitter.

Instead of the half and half you can use Amul cream, or for a lighter option, milk.
